Epsom (Magnesium Sulphate Heptahydrate) adds hardness (to a lesser degree than Gypsum), and increases alpha acid isomerisation in your boil. It is useful in darker beers particularly as it does not lower the pH like Gypsum does, but still helps increase hop bitterness.
